Smoking The Twins Today !!!

I got a late start and did not get these in the smoker till noon today, so it will be a late night. Smoking a pair of Boston Pork Butts for some pulled pork. Last evening they got lathered in yellow mustard and rubbed with Jeff's rub. Here is a picture of them 1 hour into the smoke which is 50/50 mesquite and hickory. Later on I am putting a couple of pork chops in for a little smoke for a couple of hours and then switching them to the grill for supper.
 
Man oh man , ther'ye lookin good already Mossy, I love pulled pork and sadly I'm out and no time right now to do some , what times supper ? LOL

Well, I took a nap for about an hour and a half, here is how things are looking when I woke up. I will be putting the pork chops in soon -

Pork chops should be somewhere around 6PM and the butts will probably be ready for pulling in the morning after they get to rest wrapped in towels in a cooler !!!

These butts surely are not identical, if they are from te same pig he had to of walked around lopsided !!!

Looking good Mossymo! I got a half of twin almost ready for the double foil wrap and slow cook to finish myself here in Jamestown. North Dakota is smelling pretty good today!

Jamestown...... heck you are only an hour and a half away !!! A good friend of mine lives in Jamestown and he just so happens to also be a fellow smoker. You may know him, he has the paintless dent repair business?

Smoker is at 225º, butts are just hitting 160 º internal temps. I am having a smoked pork chop right now, then I am going to double foil wrap the butts and bring the internal temp up to 205º. Then I will wrap the butts in towels and put them in a cooler for a few hours. I am just waiting for the temp to plateau so I can have a few cold ones while the temp plateaus. Hey, it is part of the job !!!

I just might, our rifle deer season opens up November 9th and Tatonka3A2 and I will be busy making sausage over Thanksgiving. Most people go to relatives for turkey, we make sausage and fire up the big smoker !!!
 
Well the last butt was done and went into the cooler at 2:30AM. At 9:00AM they came out of the cooler steaming hot and full of juices ready to be pulled.
