For years I have smoked a 25 - 28 lb; typically for 15 - 17 hours; and its wrapped in 5 lbs of bacon. At the same time usually grill a 14-16 lb bird. no one has died or gotten sick. However, an inlaw new to grilling has everyone worried terrible things will happen if they take part in this years turkey. I have no intent on changing my tradition but am curious as to the logic behind this argument. Can someone please help?
 
Most Likely someone is looking at the 40 - 140 rule and is worried about the bird temps. the rule is 40 degrees to 140 degrees internal temps within a 4 hour time period. this includes prep time.
 
My guess as i learn more is that it must reach an (it) of 140 within 4 hours of taking it out of the fridge. Thawed. An that if bacteria doesnt end up dieing in that 4 hour mark that it grows inside you.
