Bought a 10 lb bag of quarters and brined them in saltwater, some garlic, 3 bay leaves, and some lemon juice. Seasoned with SPOG, paprika, and a little sugar. Gonna smoke around 290-300 and see what happens.
Temp jumped up to 340 on me. Hoping I can get it back down before disaster strikes haha. Live and learn. At least I'll only be out 6 bucks if it goes south. Will post QView regardless
Thanks oldschool! Definitely going with a lower temp next time, but I was not disappointed with the taste. Never satisfied though. It can always get better.
