Hey everyone. Happy 4th.

Today I'm giving this a shot for the first time. I just had a few questions. I read that target smoking temp is around 225 for about 5 hours. Does that sound about right?

I'll be using lump charcoal and was thinking of a mix between pecan and hickory if you guys think that's a good mix. I did have 1 question though. At Christmas the ham I smoked came out way too bitter, I had put too much wood on and the flavor was very bitter. How can people smoke with huge split logs of wood and not have it come out the same way? How long should I have wood on this smoke?
