smoking saint lewis ribs...

    greetings,

    i've never tried SLRibs and would like to know what the usual length of this cut is... my smoke hollow racks are only 14" wide.

    if the rack of ribs is longer than this can they be CUT to fit?

    or would that corrupt the integrity/delicacy of the ribs?

    You can cut them to fit the smoker, won't hurt them at all. If you're planning on doing ribs often and want to save on space you might want to consider getting a rib rack.

    i've set aside this thursday for smoking... i usually do salmon once a week during salmon season but this week i'm taking a break.

    the smoker is a birthday present... i hope my wife doesn't regret it...

    anyway, i'm doing 4 chicken half's flattened and rubbed with Memphis magic dust, 2 pork picnic roast approx 3lbs each. one will be marinated in peachy smoked pork roast sauce:

    and the other will be treated like the chicken - rubbed with magic dust and refrigerated over night.

    finally, i'll be doing the SaintLewisRibs also rubbed with magic dust.

    i have no idea how this will turn out... i'm going to stablize the smoker at 225 degrees and smoke LIGHTLY with hickory to began... maybe finish with cherry.

    That sounds like a great sauce,send pic of results and a review of the taset.

    pretty much the same as spares, just trimmed. If you have to cut spares in two, you'll do the same with St Louis style.

    You wouldn't hurt the ribs if you cut to fit your smoker. I have a small smoker and cut stuff all the time. No problem
