I used the 321 method smoking the ribs. Is it normal using mesquite for the meat to have redish color to it? Sorry for such dumb question I have only done Shoulders with hickory to this point.
 
Not a dumb question - it does freak you out the first time. Yep, it's completely normal (actually expected). Let us know how they turned out and post some pics.

thanks for the compliments. I toned down the amount of rub I used.

It's a custom blend of Paprika,Brown Sugar, Creole Seasoning, course pepper/Salt and a pinch of white pepper.

Mopped with apple juice

Congrats on the rib Q, I use mesquite mixed with apple and cherry. It's all good.
 
The ribs look good to me my friend. Like everyone else said that's and nice smoke ring.
