Well, I've been lurking behind the posts checking out what everyone has to say and looking for tips and tricks to this art of smoking. I started off a few weeks back with a brisket flat to break in my MES 30. I must say that I surprised myself with a very tasty end product. I moved to ribs the following week with less than expert results (by my standards...although the family loved them). Come Thanksgiving, I made Jeff's buttermilk brined smoked turkey which turned out awesome! This brings me to this weekend...plans are for another brisket flat tomorrow...hopefully batting 99! I am headed out in the morning to pick up a 3" vent elbow to put on the vent to maintain a better temp because it is so windy here in OK. Happy smoking everyone!
 
Jumping into it feet first!  Turkey and brisket two of the more difficult meals to get right.  Good Job,  Let us know how the brisket turns out.
 
Welcome to SMF glad you joined us. Congrats on the new smoker and the success with it. As for the ribs check out the 3-2-1 method for spares ribs and the 2-2-1 method for baby backs. I moved your post to the Roll Call section so you can get a proper welcome. Have fun and happy smoking

Thanks for the welcome! Piney, I plan to change up my rib procedure next time around....at the time, I guess I wanted to see what I would get starting with not wrapping...lesson learned...haha!
