Hello to all.  I am originally from Arkansas, and have lived in TX, FL, and now Virginia.  I am new to the smoking world, and own a 40" MES.  I love everything about smoked foods...there is really nothing better.  I want to be successful at everything I do, and smoking foods is definitely one area I want to succeed.  I do have several questions, they may have been answered on previous threads, but I have not ran across them so far.

Is there an iPhone app or website to help me determine the proper temps and cooking times for various cuts of meat? 

How often do I replace my wood chips in my 40" MES? I am currently smoking a 8 lb Boston Butt, and I have the smoker set at 235 degrees for 10-12 hours.  I am using applewood chips (soaked 30 min prior to use), but I do not want to add too much if it is not needed.  

Should I invest in pellets instead?
 
Welcome tot the forums!  Glad you've joined us.  This is a great place to learn and share ideas about our favorite pastimes...smoking, grilling and curing great food!  There are lots of friendly and knowledgeable folks here who really enjoy helping one another.  Just ask when you need help and you'll get plenty!

Take a look at the cooking temps table in this thread.  It may have all the info you're looking for regarding cooking temps and times:

You'll likely have to reload the chips in that MES about every 30 minutes or so.  The best addition you can make for the MES is an AMNPS.  Its a smoke generator from http://www.amazenproducts.com/   that will produce hours of perfect smoke without reloading.

Thank you for the info. The Boston butt came out amazing! My wife an I were surprised it tasted so awesome, so we shared it with some neighbors...and they were equally impressed!
