As always, Jeff's newsletter is a great source of ideas for me. Quite often I will plan my weekend smoking based on what comes from him on Thursdays. This week, he featured smoked pork tenderloin on a stick, with an option to do smoked onions on the side. As usual, by following his simple instructions, I got a great meal. The only difference I did was to put the onions in the bottom of a grill basket, and I stacked the pork tenderloin sticks on top of the basket above the onions. This way, the drippings from the pork tenderloins went down on top of the onions to give them more flavor!
