Greetings Folks,

My name is Peter - I am from Milwaukee, Wisconsin.

I am a longtime grilling enthusiast and have dabbled with smoking in the past.  I bought an ECB a few years ago so I could start smoking Pastrami and brisket - but the unit was so frustrating to use that while I enjoyed the results, I didn't really enjoy the process.

I decided to simplify things and ordered a 24inch Smoke Vault which should be arriving on Monday.  I am very excited.  Off of work on Wednesday - I will assemble and season the grill on Wednesday morning.

As I only will have a few hours in the afternoon to mess with the smoker - I was thinking of doing duck breasts (maybe curing first pastrami style?) as my first experiment on the smoke vault - as those should only take a few hours

In addition to the briskets (bbq and pastrami), beef ribs, duck, chicken, turkey etc that I plan to smoke, I am also very hopeful that the Smoke Vault will be able to maintain a low enough tempoerature that I will be able to do beef jerky also.

Welcome to the forums, Peter!  You'll like it here... its the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks who really enjoy helping one another.  Looking forward to your input here, and just ask when you need anything, and someone here will surely have the answer.

Peter, I am sure you will be able to do whatever strikes your fancy. That is one of the best things about this forum. I just started smoking a year ago and whenever I want to try something I just do a search and there are many posts by great members who have done it in the past. Also, there are great posts from members with ideas I had never heard of before. Recently, Bearcarver posted a great recipe for double smoked ham that was so incredible I had to try it. It was wonderful.

This forum is a wealth of good ideas, friendly members and lots of help.
