Hello all, new smoking addict here close to Cape Cod, MA.  I'd been wanting to try smoking for a couple years and finally took the plunge and picked up a WSM 18.5" just after Memorial Day.  Since then I've done 5 smokes, including a number of pork butts and spare ribs.  I've had some really nice results.  I'm super happy with the pork butts I've done, most recently 3 butts for a party last weekend.  Loved serving up freshly shredded samples to my guests, who were in heaven!  Ribs have been a little trickier, but all have come out tasty, just with a few bumps in the learning curve.  Looking to try beef short ribs as well as brisket this summer.  

I've also been busy making sauces and learning what BBQ styles and sauces I prefer.  My favorite BBQ I've had has been at Dinosaur BBQ in Syracuse NY, and I use their sauce a lot, especially on ribs.  I also had fantastic ribs at Saw's BBQ in Birmingham, AL, and I love their tangy NC vinegar style sauce.  Love exploring different regional styles and sauces, and I am sure there is a lot more out there that is fantastic!!!  The culture, history, and regional tastes of BBQ are a lot more interesting now that I'm smoking myself!

Welcome to the board! That smoker will treat you well.Have fun exploring different flavors, most people never get farther than the usual store-bought sauces which can be sickly sweet.

Thanks for the welcome and I agree, most sauces I've tried are grossly sweet!
 
Welcome! Had that smoker for five years or so and put out some great BBQ with it. Make sure you SC mustard sauce a try. Dirt Sailor has a great recipe for it that's great on chicken as well as pork. Look forward to seeing some of your smokes.

Welcome to the Forum and wait till you try that first brisket!!!  Now that is fun!!  Probe tender is the key!!
Looking forward to brisket!!!  Also going to try some chicken breasts this weekend

Lucky!  I miss Dinosaur BBQ big time!  Just need to try and replicate it at home!!

Thanks Lance I'll have to find that recipe and check it out.  I did try the recipe for Columbia Gold on Meathead Goldwyn's site but it came out tasting a tad too much like plain old yellow mustard.  Still tasted pretty good
