This past year we raised two turkeys.  My son fried the Gander at Christmas while we were away on vacation.  The Gobbler dressed out at 35Lbs and in January I brined and smoked him with apple wood on my WSM 22.5".  He took up most of the smoker.  I poured Red's Apple Ale into the drip pan and periodically basted the turkey with the ale and turkey drippings.  I saw a video on youtube for smoking Apple Cider Turkey.  Here is a short video - I wish we had smell-o-vision --
