I'm looking to get just a turkey breast/quarter to smoke for my wife & i to enjoy. Just got a GMG DB and figured I'd try out a turkey.

Any recommendations on brines?

What wood pellets do folks use for poultry? I've got a little variety of Lumberjack pellets (Hickory, Oak, Apple, Competition, Supreme). Any of those good for turkey?

Congrats on the new smoker!

Brines are part of the flavor profile, so they are personally subjective.  I use a personal modification of Alton Brown's OJ brine, inject it into the breast meat, then brine it.

As far as smoke flavor, on poultry I prefer a 50/50 mix of hickory and cherry.

I use the Green Mountain Premium Fruit Blend pellets. I brined my first turkey breast but since then I have used an injection from one of Jeff's newsletters instead. It takes less prep time.
