Do I smoke chicken right on racks or in a pan? I plan on brining overnight tonight.

maybe a drip pan on the rack under that bird.....will save you some clean-up (maybe)...Willie
Rack with Drip pan. A Roaster will have quite a bit of fat and Brined birds release moisture. Makes a mess...JJ

I was planning on using a drip pan. I figured it will be messy. I will wrap everything in foil also for easy cleanup. Working on my brine recipe now
