Just purchased a Masterbuilt 30" inch smoker and want to have the guys over for Smoked Boneless Prime Rib. Need temperature and time assistance. Minutes per lb. would be helpful for Medium Rare and Medium. Thanks!

If you want a consistent edge to edge color in your slices, follow Bear's step by step and you can't go wrong.  If you want this with a crispier crust, pull it 10 degrees earlier, let it rest for 20 mins then sear on a hot grill or put it in a 550 degree oven for 5 to 8 mins.


If you want the outer edges cooked more and less done towards the center, cook at a higher temp (325 or more).


For the record,  "X mins per pound" doesn't work for Prime rib as the thickness of the loin determines the cook time, not the weight.  On average, you are looking at around 4 to 4 1/2 hours @225ish, and 2 to 3 hours at 325ish.   If your roast is very thick, add another hour.  If it's on the thinner side, subtract an hour.
