Smoking ahead for the 4th

    We are going to Texas for the 4th & I promised my sis in law to help feed the ravenous hordes (thirteen of us)

    Had chicken & pork butt & made sausages, wings, a small loin, & ABTs I had to smoke another chicken on Sunday as i couldn't stop sampling one of the chickens[​IMG]        sorry no pics of the finished sausages except in the tub.

    Used a mixture of pinapple & apple juice to inject the butt.

    Nice spread!  Did you brine the chicken first?  What rub did you use on the chicken/wings?  Did you use a mop at all?

    Oh, and did you put the sausage into casings before you smoked it?

    Sorry for all of the questions, but that's the only way I'm gonna learn!

    Sorry I missed your message yes we stuffed them first & frose a bunch about 15 lbs altogether. Haven't brined yet. Doing some more today. And turkey breast bone in.
