holly cr*p..a 30 lb turkey..are you sure its not a small ostrich???..well anyway..you need to make sure that big bruiser gets to 140 internal temp in 4 hours to kill off any bacteria or germs...the largest bird i have done is about 14 lbs...there should be some uds pros here shortly to answer your question
 
I just got a 30 lb bird also. I was thinking about cutting the breast meat away and just smoking them. Anyone have any feed back on this would be better than smoking it all as one.
