I usually make a few different types of ABT at once.  One of the ones I like best I use a horseradish white cheddar cheese.  Try different things and see what your crew likes
 
One thing about the ABT's.....make plenty, they go fast. Japs are getting so big now I slice in half lengthwise, stuff and wrap in the bacon. In the smoker is fine but they obviously take longer than on a grill. Hmmmm, I'm thinking a couple hours to get right. And, the longer in the smoker the less the heat IMO......have fun, enjoy them ABT's.....Willie

So I settled on trying the ABT'S using cream cheese mixed with cheddar cheese. Gonna add some smokies and wrap em with bacon. Gonna sprinkle the cheese mixture with some of my rub.
