I'm going to be smoking 2 10-lb packers on a slightly modded Char-Griller smokin' pro. (Just installed a baffle to help regulate heat on the surface of the grill.)

I've done 1 before and it turned out incredible. Will smoking 2 at the same time cause cook times to be slower? Or are there any other unforeseen problems I'm not thinking of?

So long as you have enough room to fit two briskets without cramming them in and can maintain your temps it won't increase the time. The big difference between one and two will be the additional heat required to keep the temps up while the briskets are cold. If you can get past that you will be fine.
