This afternoon I stopped by the local grocery store and had them cut me some thick center cut pork chops. Currently I'm an hour in to smoking, using Jeff's rub and a combination of apple and oak for smoking. Looking good so far!
Turned out really delicious! It took about 2 hours total, temperature hovered around 230-250 the whole time. Some more pics with grilled peppers and strawberry, apple, pine nut and feta salad.
Looks really good. If you get into curing, you can use "Pop's Brine" and turn pork chops into what the grocery stores call: "Smoked Pork Chops" (ham like). I've done it before and they have come out nice.
