The rain continues! Ya'll might think I was kidding about towing the boat with me everywhere I go, just in case. Had two slabs of spareribs that needed a good smoking, so I fired up during a short break in the rain this morning. I painted one with Worcestershire sauce and then applied a heavy coat of rub, the other got a heavy coat of rub. Used two different rubs to see how they are. The one that got just rub was half Willingham's rub and half KC Squeal Rub, mixed together well. The other got KC BBQ Seasoning. The darker slab got the Worcestershire & rub. Wrapped both and put them in the "Refreshment Center" in the garage overnight. Here is some before pic-O-graphy. Will post some after when they come off. "AFTER" Pics - These are some of the best ribs I have smoked (he said, reaching back over his shoulder to pat himself on the back). Had this been a competition they would have been money winners. Smoked them 6 hours with lump charcoal, hickory & apple. Sprayed them every 2 hours with a heavy coating of real apple cider, the kind that has pulp settle out after it sits a while. Sprayed them immediately before removing from the smoker. The cider really added a lot. Texture of the meat was perfect. Excellent flavor. I amazed myself. Made some of my beans and some macaroni salad. Good eats!
