Hi, all. I'll just do a quick intro here and get my profile filled out more completely soon. I jumped in with a question yesterday and it was like driving one of these
into a nice fish pond
.
I've been grilling for many years and recently dropped my Brinkmann 2600 POS for a Weber Genesis E-310 (the Brinkmann flamed out disasterously after 6 years with a NEAR loss to my steaks). This was a miraculous changeover from a grill that I thought was decent but constantly had to fight to get good results to a fantastic grill that seems to cook wonderfully for itself! My grilling has doubled to almost every day because it's SO nice to have a grill that performs so well and makes it so easy to get good food.
So this change for the first time has me seriously exploring smoking -- something I had trouble even trying before. I've made some simple mods on my Genesis that are producing really good smoke with one more to be added. But I still would like to try using a "smoker" -- hence my questions about the WSMs.
Ok, well that's my grilling. I retired from IBM 6 years ago and now don't seem to have enough time for anything! I'm a serious woodworker and wood carver and spend most of my time in my shop. I have a great, but aging, home theater and sound system. I've been married for 41 years to the same woman, have one daughter (who 15 years ago married my last IBM coop student) and 2 fantastic grandsons (5 and 7). We live in a section of old forest near Pittsboro NC on 10 acres in a subdivision that emphasizes the environment rather than size or type of house. I have two dogs and will eventually get the "monster" , Dante
, in place as my avatar.
I've been astonished at how much information is avaiable in these forums. I look forward to ya'll straightening me out and sharing my thoughts to become a true "smoker".
Cheers,
Rich
