Howdy from near Billings MT,

Been lurking for years... I have an 30" MES, an "original Little Chief" smoker and a big stainless grill.

I am originally from the west coast of Washington State where my brother taught me how to smoke salmon in old renovated refrigerators back in the late 70's.

My wife got me the MES a couple of years ago for Christmas, I have done quite a few sets of ribs, brisket, butts and make my own sauce, mostly just from lurking this site and others.

I recently bought a meat grinder, sausage stuffer and vacuum packer so were getting pretty serious now!

I've got a couple of deer in the freezer and have been assembling an arsenal of recipes and info to make sausage.

Thanks so much for making this a great site!

First off welcome to SMF there Red. You'll really like this place for there are a bunch of really good folks here that would just love to help you with just about anything to do with smoking meat. Then if you have any questions you just post them here or yu can try in chat for a faster answer. If you are really new to all of this I would recommend that you look up and take the e-course. It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.
