I got tired of not being near a BBQ place when I had the taste for ribs, brisket, or pork so I went out and bought an ECB. I had no idea what I was getting into but after putting the smoker together and a quick read of the directions it was off to Costco for my first foray into the greatness of smoked baby back ribs. I got the ribs prepped, the fire started, and on went the ribs. The ECB leaked like a sub with a screen door - there was no way to regulate airflow and consequently, getting the temperature right was a crap shoot. The ribs were awful - they came out the color of the inside of the smoker after the first try; charcoal black. Then, I went online and found several ECB mods. I took the best examples and set out to make my ECB workable. This is what I came up with. I did a test burn this past weekend and after a few tweaks and some trial and error, I managed to control the temperature. My bride is at the market as I'm writing this - her mission is to fill the holes in my choices of spices for a pork rub. Tomorrow, a Boston Butt goes into the ECB - can't wait.
