well, my gosm wide body came via ups today. as soon as i got home from work, it came straight out of the box and i got it assembled right away. the box was pretty beat up and had a few "cosmetic" flaws with it, along with a broken rack holder inside. fortunately for me, it was the top one, so my rack still still works properly.

anyway, on to the good stuff...after doing a quick leak check, i got it fired up! i turned the tank on about half way and set the gas to low on the smoker. in about 12 mins, i had tsb! i was also able to maintain a constant 250 during the seasoning session. i used the stock set up with some hickory chips and couldn't be happier! now i can't wait to throw some meat on there and get smokin for real!

Hey!.....G-A-D, since it is Thursday night, I imagine the new smoker will be getting fired up on Friday?......What is it going to be?.....Please let us know.

that's one downfall of being in the military, lol. i do have a bbq planned for the 14th though. pork butts and spare ribs planned for that though!
 
Looks good I think you'll like that smoker I know I like mine. It sure makes maintaining temps nice. Now ya just need a day off to fire it up and smoke something. Don't forget the Qview tho

Congrats Grillin! Your gonna love the GOSM. Almost a "set it and forget it" smoker. Just gotta keep water in the pan and wood in the box and check the temp once in a while.

Might wanna think about getting a grill pad if ya don't wanna get any grease stains on that concrete in the pic.
 
Great! You will like the GOSM I'm sure. Soon yall be ready ta modifiy it an enjoy it even more! Besure ta get yerself a digital thermo fer box temps an one fer each meat yall be smokin. Enjoy the ride!
 
after reading some posts on high temps and thinking about when i seasoned mine the other day, it held a constant 250 with the tank half on and set at the low setting. i tried to get it down to 225 or lower but did not have any success. i tried messing around w/ the damper, and had the water pan in during this time too and it was in the evening, around 75 degrees during the time. i thought maybe it was the thermometer since it was reading about 75 when i was assembling it. so i did the boiling water check and it was spot on. i read where someone had mentioned turning it towards the off setting to get lower temps, but wanted to see if anyone knew whether this would work, or is a good option?

i'm trying to find a simple solution for right now and would appreciate any help i can get.
 
since i have some time off over the next 3 days, i'm going to break it out again and see if i can takle this temp problem. i didn't get much time to tinker w/ the different settings when i was seasoning it. so i figured i'd really get some play time in with it, try a few techniques i read about and who know's, i may throw something in it......maybe a butt or rack???

You mentioned a temp and a setting, but what rack position where you reading from? Most GOSM's will have the lowest reading at the top rack. My big block on it's lowest setting will read 225 at the lowest rack. I have noticed that when the cabinet is in full direct sunlight, it will raise the cabinet temp, and sometimkes I have to adjust rack position. Good luck my friend.
 
i was taking the reading off the door therm. i'm headed out right now with a digital therm. to get some temps on the different racks and play around with different settings.
 
I had the same issue on a bullet smoker when it was new but once it was seasoned the temps came down so that might be part of it.
