Was going to do a fattie for the 4th, but got tied up on the family outing and ran out of time.  Hey, just had to smoke it today.  This is my first fattie.  I had so many options for filling, my head was swimming. Finaly decided on a Swiss, Ham, Pineapple, and Red Onion. Smoked for 2.5 hours at around 250 (I say around, because my thermometer broke) in pecan.

We paired it with some grilled sweet corn and cucumber salad.  My 2 year old son inhaled it.

Thanks it came out well.  Told the wife that next time we will do an italian sausage sandwich fattie.  Gonna use italian sausage, stuff with grilled peppers and onions, mushrooms, and provolone.  Going to smoke some tomatoes and make some marinara with them.  This may happen sooner than planned. 
 
That sounds like it came out tasting great- when the 2 yr olds approve it has to be good as picky as they are

Luckily for us he isn't picky at all.  He eats just about everything.  Especially if I cook it.  He just thinks that is awesome.
