Smokers built out of wood?

How do these smokers work? Are they just for cold smoking, or can they be used for charcoal, wood, propane, or electric smoking? If so how do you build it, and not catch it on fire when you use it?
 
i am building a natural gas fired smoke shack out of plywood. i will be using a PID temperature controller to run the gas valve. i will be lining the bottom of the smoker with concrete board to prevent fires.

i would not use one for wood fired or charcoal fired smoking but for propane, gas and electric, they work just fine. you just ahve to have a lot of space around the flame and something like concrete board as a barrier.
 
The chamber is wood, the firebox is metal generally. I saw a build of an UDS that had a concrete firebox in the bottom of an oak barrel.

The smoking temp of under 300 shouldn't lead to a fire.
