I am new to the site but looking for knowledge from everyone. I currently use an small Cajun injector electric smoker and do great work with it. I want to up the size of batches I can make used mainly for jerky, sticks, bologna, bacon, and summer sausage. 

looking to build a electric smoker out of a steel box of some sort i haven't found that part yet but looking for input on the following heat element and controlling it using some sort of temp. controler like a Plug and Play controller. anyone with any experience or input on these units please fill me in. i plant to build a box roughly 5' tall x 3' wide x 3' deep

would the fan in this heat unit help evenly heat the smoker and reduce how much i have to rotate racks both vertically and twisting them 180 degrees as the side of the smoker with the heat element on my cajun injector cooks faster than the other so racks get moved up and down and twisted.
