Smoked/wood fired grilled surf & turf with step by step

Here's a weekend smoke/grill. Did steak & margarita shrimp. Here's what I did.

Margarita Shrimp
1/4 cup olive oil
1/4 cup tequila
1/4 cup margarita mix
splash of triple sec
A little CBP

Combine marinade & add shrimp. Let sit for 4 hours. At the same time add your favorite rub to your steak (can't post my rub, I just throw it together by sight. If I try to measure, it wouldn't be right).

After 4 hours, start your smoker & place the shrimp on skewers. Smoke the steaks until they reach internal temp of 110* (takes about 30 min). Meanwhile, fire up the charcoal grill with some lump.

When the steaks reach about 104*, add about 4 fist sized wood chunks to the lump charcoal grill. At 106* start the shrimp on the grill. Takes about 5-6 min total for the shrimp.

When the shrimp is done, throw it in the smoker to warm. Now throw the steaks on the grill. I like medium or medium rare. It's about 60 seconds on one side & 45 on the other.

Looks great nomo. The shrimp marinade is interesting. I bet they are taste as good as they look.
 
I've never been a big fan of grilled shrimp until I decided to play around with this one. It's quite possibly my new favorite shrimp recipe (move over fried shrimp).

The marinade gives it a sweet, yet slightly sour tang to it. The wood smoked taste sets it apart from anything I've ever had.
