Smoked Wings & Shrimp (MES30)

Another Thursday & that means another day off from work. After the success I've enjoyed this summer with chicken wings & my first smoked shrimp I wanted to do both again today.

It was 45 degrees, drizzly & we had wind gusts of about 35 mph, so I was hopeful my MES would cooperate. No problems. I put my chicken rub on my wings, & put them in the refrigerator for a couple of hours. Then I put them in my buttermilk brine for two more. After that, I took them out, applied a little more rub & popped them in.

When the wings were first in the fridge, I went ahead & put my shrimp in a bag & added olive oil & my rub. I then put them in the fridge for a couple of hours. About 60-70 minutes after putting the wings in I went ahead & got my shrimp out, in the pan & sliced up a stick of butter to put in with them. I also gave them a light dusting of Cajun seasoning as well. Put them in then with the wings.

The wings went about 2.5 hours, while I pulled the shrimp at the same time. I sauced my wings & stuck them under the broiler in the oven for about 5 minutes to caramelize the sauce & help crisp the skin. We REALLY like our wings like this. Dinner was excellent & I have some wings to take in my lunch tomorrow. And I ALWAYS keep a sauce there, too lol.

Thank you Rich. I just kind of did them how I did the first time regarding the butter, as it was pretty good before. I got a good marinade recipe for next time from Chef JJ, though.

Thank you OS, they were excellent! Appreciate the pernts. It was my second go 'round with shrimp & the wings have always been a favorite around this house. As far as the smoker goes, I hate to waste the space. I always try to do at least one side, but am guilty most times of not "fillin' her up" all the way lol. I also try to utilize certain "spots" in this thing & sometimes that will cost you space too. Thanks again for takin' a look, guys.

Might sound like a dumb question... but  Do you peel the shrimp before smoking them or not?
