Smoked Wings on my brand new WSM!!

Well, my WSM showed up late last Friday, which unfortunately kept me from firing it up until Saturday. But let me tell you, it was worth the wait!! I spent last year learning how to smoke on an MES, unfortunately, it ended up being more like an outdoor oven than a smoker. This year, I was ready to upgrade to a charcoal smoker, and with some very helpful advice from some members of this board, I decided on the WSM 18.5.

I wanted to try something that was rather simple and wouldn't take to long since it was a little chilly out on Saturday. I did have with a Cajun seasoning, and half with Jeff's rub. My wife and parents said they were the best wings they have ever had. So with out further delay, here are a few pictures of my smoked wings on the virgin run of my WSM....

Here they are half way at the flip....

Those wings look great. You got some good color on them. Did you finish them on the grill? What temp did you smoke them at?
 
You know around here wings cost twice to three times as much as legs. Crazy,    But you did a mighty fine job on your wings

Thanks guys! I love this smoker! I don't know how I ever lived without it. So far, I have done the wings pictured above, a pork loin, which I swear might have better when we ate the leftovers, and just smoked some hamburgers and hot dogs this past weekend. It is incredible. I still have some ribs in the freezer that need smoked, and I'm looking forward to a long low n slow cook with a big old pork butt. I also have turkey thighs and drumsticks. So much meat, and so little time!

LOL..... yup I remember those days! First month of owning my WSM I think I cooked almost every dinner on that thing.

..... and yes most smoked meats do taste better the second day - especially if you vacuum seal them. Something about it just lets the smoke flavor distribute throughout the entire meat better.... sooooo good! Now I load up my smoker about 1 or 2 times a month and vacuum seal and freeze the meat in 1 lb. bags, then I just have to pull it out and toss it in a pot of almost boiling water and you got smoked meat!
 
They do look good.  I have only tried wings once and I thought the skin came out chewy.  Need to give it another shot.
 
Thanks Skroll, the skin was almost perfect on these. I dumped the water when I flipped them, and they crisped up real nice. I didn't use my Maverick, but I bet I was running around 275-300.
