Looking good,if your interested in a new toy check out a vortex at Owens BBQ. It's super handy for high heat needs like chicken wings!

A vrotex is a stainless steel funnel(sort of like the plastic collar you put around a dogs neck to prevent them from licking or chewing) that you can use to cook either directly or indirectly on your kettle. It also allows you to cook at very high heat making it a god-send for chicken and searing steaks. I've had mine for about a month or so and use it 2 to 3 times a week. Hope this helps

Time and temp on wings? I'm a bit new. Our fav BBQ joint does a nice smoked wing that the flash fry just to put a crisp on the skin that we love. I'd like to reproduce.

I smoke wings @ 300 about an hour to 165 I then crisp them on my gasser and then sauce. Which takes them to about 175 - 180
