I've smoked many items, but the 22lb turkey I have just smoked may have been the best. Here's how I did it....

Defrost a 20+lb frozen turkey in the fridge for 5 days

Dissolve 1 cup Kosher Salt, 3/4 brown sugar,1 gallon of water, and 1/2 cup of your favorite rub, and then brine the bird for 12-24 hours

Split the bird in half, spatchcock, as it will not cook otherwise. Creating two, 10lb+ halves

Rub the bird with your favorite rub, heavily

Smoke with your favorite wood. I used a mix of Apple and Hickory

4.5 hours on 250 degrees will do it! 

AMAZING!!!!!
