Picked up 4 chickens today on sale for .49 a pound. Smoked one at 250 for 4 hours to IT of 165. Just rubbed it with some honey mustard, salt, pepper, onion powder, garlic powder, and a bit of cayenne pepper.

OMG I didn't know that chickens really got chicken pox! Can you safely eat it? Chicken pox, is that were the shingles comes from?

I love smoked chicken and it looks great. Did it squirt juices at you when you pierced the skin? And the good china out for the presentation. [IMG]

    Nice job.

You deserve points just for your screen name. I would pull into a smoke house for lunch that had a side hung over the door "Smoking EarL's". Maybe a cute little pig in overalls on each side of the name, better yet and boy pig on one side and one with pink bows on the other. Oh yeah the place would be standing room or take out only, take a number and wait!

Smoking Earl's, How yall are? Come on down and make yourself at home!
