Had a venison hindquarter so I decided to make a batch of case-less sausage (70/30 venison/ground pork). This also gave me an excuse to test the AMNPS that I got for Christmas. Followed Bearcarver's recipe except I didn't have any Anise seed and I added powdered milk.

Made the logs using a jerky shooter, mainly for uniformity. Pellet smoker worked like a charm, nice steady stream of hickory TBS (super pleased). I loaded 2 rows but stopped the smoke at 5 hrs figuring that was sufficient for our taste - which it was. Took right at 12 hrs to get the logs to 152°. Came out great in both flavor and texture.....

Thanks, stepped up the heat this time to get a little more kick. The shooter helped me get better shapes than I could get forming by hand but still aren't the prettiest things!
