I have been busy and have not been on in a while.. But it's getting close to turkey day and I'm trying to improve on my smoked turkey. I am trying for to get a more crispy skin. Based on what I have read the ideal temp is in the 300 degree range. I have brined my turkey for 24 hours and it is now in the fridge to help dry the skin. My question is when do I put the EVOO on the bird?

I'm wondering the same thing. If you're going through the trouble of drying the skin, do you oil/butter it before smoking?

I put the oil or butter on just before it goes in the smoker. I'm using oil more these days. The oil helps crisp the skin. For example, I oven fry chicken quite often. I spray with oil, apply seasoning, apply flour, then spray with oil again. Always comes out crispy.

The skin was drying pretty good after being in the fridge overnight. I added the dry rub to the bird and it's going back in the fridge for about 12 more hours. I will put the EVOO on in the morning while I'm waiting for the smoker to heat up. What kind of time am I looking at on a spatcocked turkey? I'll be running the smoker around 300 degrees.

You will be looking at about 4-5 hrs. I did one today in my MES40 I ran it wide open the whole time. Hope this helps.

What temp does you MES40 run at? I have one and wide open it runs at 275. I will be doing the turkey tomorrow on my Dyno Glo Wide Body. It's is going to be cold up here in Virginia tomorrow morning when I fire up the smoker.
 
I’m using my dads smoker to do a 14lb bird. It leaks like a sieve hard to keep the temp consistent but I’ve had it really close to 250 all day. After 5 hours legs are at 150 and breast at 140. I wrapped the thighs to keep them from getting any darker and to let the breast catch up. Not much longer to go! Happy thanksgiving good luck
Good looking bird, I never thought of covering the legs, I'll have to take a look at that when I do ours on Sunday.
