Smoked Turkey from DDD

I'm going to try posting on this forum.

Hey All

I was watching Diners, Drive-ins and Dives the other day on Food Network, the KC BBQ edition.   They were at Smokin Guns BBQ in KC, and his food looked great.  But something that caught my eye as something I wanted to try was his turkey.

Just after the 4 minute mark, he goes into showing his turkey.  He says it's partly frozen, he rubs it, and then smokes it.  When he cuts it, it appears boneless.

Anyone know what kind of cut that is? I mean, it's obviously turkey breast, but it's a huge boneless turkey breast.  The boneless turkey breasts I find are the butterball and they are small.

I would love to smoke that up on the Egg.  Any thoughts?
 
When you buy a breast, I think you get half a breast.  You can see when he cuts this one, it has a cut down the middle, likely where the bone was.  Maybe they can fillet out the bone and keep the skin in tact.  It may be possible, or he cut it out later after it was cooked and they didn't show that.  

I think it may be likely that with it being partially frozen, you build the crust on the outside that seals in the moisture that was still frozen into the center of the breast.  That is my guess, but I could be wrong.
