I was glad I could get my hands on the turkey legs, and beef ribs last minute.

I am looking forward to a bowl of that gumbo for dinner for sure.
 
i was having trouble getting this pic up yesterday, here is a close up of a chunk of meat off the turkey leg.
 
yeah it was stuffed. I always use one rack to hold a drip pan above the water pan, custs down on capacity, but saves on clean-up.

Now thats a great looking gumbo and on a moments notice thats some good eats. I like that raux nice color and all the things in it wow I'd like to have some of that

the roux took a little over 30 minuts ot get that milk chocoalte color, gace the gumbo great flavor(im having a bowl for dinner).

the beef ribs were a first, and great as well.
 
As a louisiana born an bred cajun. I was excited to see someone doing a gumbo. That was untill ya put corn in it. LMAO, I bet it turned out good . next time leave out the corn and put some okra in it.
I have smoked my shrimp an sausage before making a gumbo and have to say it adds a great flavor.
 
I typically dont put corn in but I have so much extra right now(my buddy who owns a farm just gave me 3 dozen ears) I am just trying to think of ways to use it.

the corn added a nice texture difference actually. I couldnt find any fresh okra or I would have put some in, I love okra.

the smoking the meats and then simmering the smoked chicken and turkey in the broth for an hour really gave it a nice taste.
 
Wow, looks like there were lots of goodies going on in SMF members' kitchens/smokers this weekend! That gumbo looks otherworldly! AWESOME!
