This was kind of a spur of the moment smoke. To be smoked was:
  • Approximately 2# out of a 6# pack of beef plate skirt.
  • Foil pouch containing onion, chives, jalapeño, and carrot.
  • Flour tortillas for the tacos.
I changed up my usual beef marinade a bit and liked the outcome. I mesquite smoked the fajita meat for about an hour and a half then seared it for a minute or two on each side. The foil pouch thing was something that popped into my head at the last moment. It turned out awesome in the tacos. I seasoned the pouch contents with lemon pepper, a capful of regular vinegar, and a bit of lime juice. The tortillas went in toward the end to toast them slightly and impart some mesquite goodness on 'em.

Looks good and tasty. Nice job smoking the tortillas. Maybe even try smoking some onions, tomatoes and japs and make a smoked salsa, I bet that would be great.
And no worries about all the pics, the more the better. I guess that's why you can add up to 30 per post, so we can drool more.

If this had been a planned smoke, I would have done exactly that. The good news is that I have another 4# in the freezer.

That looks like a great recipe. I wish I lived somewhere where it was warm all the time. Nothing like flip flops and shorts. We just got dumped on by 6.8"
of snow 10 miles south of Flint Mi.
