Smoked some legs and thighs at the farm

Before #2 son and I built the rotisserie cooker on friday, we vacuum tumbled some bird parts in a brine for 25 minutes and then let them sit in a little brine over night.

I'm not sure if we came up with this brine, or if someone shared it with us, but he and I have used it several times now and it rocks!

half gallon water
1/2 cup salt
2 tbsp chili powder
1 tsp garlic powder
1 tsp onion powder
2 tsp mexican oregano
1 tbsp fresh cracked pepper



Saturday morning we got up early, went to the farm, and started the smoker. Dad loves all things smoked, but he'll thumb wrestle you for legs and thighs fresh from the pit.

We used the small offset for these parts and fed it with pecan wood.


Once she was heated up to 300, we loaded her up with the parts. I seasoned the outside of the with a little Rooster Booster that someone sent to me a few months ago. It has a nice tingle to it, and combined with the brine, the flavor was good!


Out at the farm we don't get much wind on most days, so even though it was only 75 degrees, we needed the shade tree! It was nice sitting there talking and watching the smoker with the cooler between us, and with the remote thermometer, I didn't have to get up for a while!


After the parts were well smoked and showing 165, it was time to dig in! Dad and my son tore those legs and thighs up!


All in all, it was a beautiful day and we had a great time!

Side note for those that are familiar with my pop's health:

D.O.D (dear old dad) may be having memory issues, but he can still tell some tall tales, keep folks laughing, chow down on some BBQ, and scold me for not bringing him a bottle of whiskey! He wore my butt out about it in a playful way, which told me that he was pretty lucid yesterday, just what we needed since my son was in town from school.

(He may have had a few beers, just don't tell the doc or my wife!). :Beer:

Good to see your Dad's out and about, Cranky! 3 generations at the table is always priceless.
Your small offset is like my only offset LOL!

Looks like you had great day.  Definitely one to remember and cherish.

FWIW...Beer with a smoked meal doesn't count as drinking.  It's a condiment like sauce.
