Smoked & Seared Ribeyes, Chops, Brats- Q-view

I had to try posting from photobucket tonight with my freshly opened account. My part of tonight's dinner is the topic.

We still had some ribeyes that my wife scored awhile back for $3.99/lb, some assorted pork loin chops for $1.79/lb, and some butcher shop brats from a half hog we bought last winter. A cold smoke & sear seemed like a good place to start.

Here are the ribeye, seasoned very simply with kosher salt and fine ground black pepper:


And, the chops seasoned with lemon-pepper, along with the brats:


Just into the smoke @ 115-120* grate temps with hickory:




After 1 hour cold smoke, it's time to get some more coals hot for the sear:


Just off the grill and heading for the house (it's dark-30 here and chilly, so we're dining indoors tonight):


My ribeye, of about 1-1/2 lbs, medium well...a bit more done than I like, but still very tender and juicy:


So that's my first photobucket q-view. I couldn't resize my second pic the same as the rest for some strange reason...I'll see what happens on the next round, hopefully Saturday (beef snack sticks and jerky strips from my jerky gun).

I gotta get my ground beef, cure and seasonings mixed up for the morning!

BTW, I really LIKE photobucket after using postimage.org/imageshack for over a year...so much more that you can do with your images...nice!

BTW #2, eating dinner was better than looking at it!!!!!! LOLOLOL!!!!!!!!!

Looks delicious, I agree with you on the steak temp, I prefer a good med-rare to medium at the most, amazing how much better a steak gets when adding a little smoke.
