Smoked Salmon-Easy recipe-Homerun taste

  1. 2.2 lb salmon (half eaten by hungry cook before serving family!!)

    Temp 160

    Time 3:30

    Hardwood flavor-apple

    Brine: 1 gallon water, 1/2 cup kosher salt, 1 bottle beer, lemon juice---- 2 hour soak.    Rinse in cold water, pat dry with paper towels, air dry to form pellicle  ( about 1 hour)

    1 tuna steak--same as above

    Do NOT overcook your fish.

    I have two smoked yard birds coming off the smoker within the hour.  I'll posts some pics after dinner.
