Happy Cinco de Mayo!

Homemade BBQ Pulled Pork Burritos with Chocolate Fudge Brownie Ice Cream for dessert. Amazingly, there's zero calories in tonights meal!

The Beans: Rosarita Spicy Jalapeno Refried Beand with XLNT Chili Con Carne.


The Pork: Hickory and Mesquite Smoked BBQ Pulled Pork. Brined, smoked and added to a slow cooker with diced onion, jalapeno, garlic, chili powder, cumin, cayene pepper, salt, pepper, lime juice and a can of tomato sauce.


Assembled Burrito: Beans, pepper jack cheese, pork and La Victoria Thick 'n Chunky Medium Salsa Verde.


Follded Burrtio: The finished burrito burstin' through the seams!


Burrito Cut Open: It tastes better than it looks! ;)


Dessert: Ben and Jerry's Chocolate Fudge Brownie Ice Cream!


 
Now that's a meal there.

Thanks, guys. It was EPIC! But, can't eat like this too often. I'm done until next Cinco De Mayo. Been eating leftovers for the last few days. I need to eat salad for the next two weeks! LOL
 
That looks great. Where I grew up there was a place a ways down the road that searves a "wet burrito". It was a hot mess to look at, but it was an amazing meal to sit down too. What you have there is a great meal that after you will either need to loosen the button on your pants or wish you had stretchy pants on. I have some leftovers in the fridge from Cinco and only me for dinner tonight. I can see something similar in my future for dinner tonight........
 
That meal was the only thing I ate that day. I broke it down, because I am on a diet, to 1,905 calories.

Burrito:
Tortilla - 265
Beans = 200
Chili Con Carne = 400
Cheese = 160
Pulled Pork = 180
Salsa Verde = 30
Beer = 150
Ice Cream = 520

Total = 1905

As you can see, it's the chili con carne and the ice cream that pushes it over the edge. But yes, I was feeling quite bloated after that meal.
