  3. This is one of our all time favorites, also known as cochinita pibil. I've got a big ol' hunk of piggy in the freezer and the banana leaves. I even have the sour orange juice. I think this will go on the menu next week.

    I've done that recipe a couple of times in the slow cooker & it turns out great (although I cut back on the cloves, not a big clove fan).
    I have wondered if smoking would work. Looks like it will. That lime juice variation sounds good. Nice job. [​IMG]

    This is about the best looking Puerco Pibil I've ever seen around~ outstanding job FiU! Eaten a lot of it in my life and the lime juice variation is better as far as I'm concerned. All good tho, and if you like it, well, like it. [​IMG]

    Banana leaves are springy and thank your assistant for the pic. Good job on the step-by-step, by the way. Nicely done.

  13. Wait? Where did it go? This recipe looked fantastic and my Mom just got 50 pounds of pork chunks from Omaha Steaks... I was going to make this, now I'll have to wing it!
