Decided to have some fun tonight while my brother's in town. Picked up this monster at the local international market: 


Salt and Pepper: 


Smoked it at 225 until internal temp was 115: 


Pulled it, brushed it with some melted butter and threw it on the propane for 4 minutes/side until internal temp ran about 126: 


Tented it and rested for about 10 minutes: 


It was pretty amazing: 

 
That really looks amazing!

I'll have to give the brush on butter a try for sure.

What wood did you use?

I wish I had a brother, then I would cook one of those. I'll bet if I cooked a few, I know where I could find a bunch of brothers. That one looked really great. The butter sounded really good. I'll try that if I can get it past my nutrition expert who shall not be consulted.
