While resting up from the calf fry Saturday night, I threw a hunk of pork on the smoker yesterday and used it for tostadas. I rubbed it with garlic paste, onion power, lots of cracked black pepper, powered jalapeno and kosher salt. I wanted to save the drippings so I smoked it in a pan this time. (I wanted to use the drippings and left overs for something else) Topped some crisp fried corn tortillas with some spicy pinto beans..... added the smoked pork, shredded cheese, lettuce...tomatoes with guacamole, salsa and mexican creme on the side. They turned out pretty tasty.
