Smoked Pork Tostadas

    While resting up from the calf fry Saturday night, I threw a hunk of pork on the smoker yesterday and used it for tostadas.

    I rubbed it with garlic paste, onion power, lots of cracked black pepper, powered jalapeno and kosher salt.

    I wanted to save the drippings so I smoked it in a pan this time. (I wanted to use the drippings and left overs for something else)

    Topped some crisp fried corn tortillas with some spicy pinto beans..... added the smoked pork, shredded cheese, lettuce...tomatoes with guacamole, salsa and mexican creme on the side.

    They turned out pretty tasty.[​IMG]

    I ended up having company and we ate almost all of the pork...so much for my leftover plans.[​IMG]

    Your picture of the tostada is very inviting, good choice on toppings too. Did you fry the tortillas in the drippings? I sometimes will fry them in Chipotle infused oil for that extra flavor. Nice job!

    STOP!!!!!! Girl that is some GOOD LOOKING food. And I just love EVERYTHING you put on them.

    Thank you richoso, chipotle oil would be wonderful!
    I just used regular oil to fry the tortillas. I had planned on using the drippings and extra meat for some chile rellenos.....Now I need to smoke some more meat.


    Smokin for Life....I forgot the sliced black olives! [​IMG] lol
    I love them on my tostadas.


    Ray, smoked enchiladas sounds wonderful....If you make some, please take pictures for me and send any leftovers.[​IMG]


    I had also planned on making some smoked pork tamales. I just need to find more time to do them.

  13. Whenever you make plans for leftovers they tend to go away! Wonder why that is?
