Smoked pig bones

  1. I had these in brine since mid december. I usually take them out after two weeks, but with holidays and all...

  3. Have a long queue of meats waiting their turn to the (cold) smoker. My pit is not that big. In cure or brine : backfat, hocks, loins. The bones above drying. Belly for bacon started smoking yesterday.
     
  4. After over 40h of (very) cold smoke

    Will rest for a couple of days, then soup or beans time.

    I want some of those to use in beans and MANY other things!

  7. That would add AMAZING flavor to soups-- great work! 
     
  8. Should you need any convincing:
    - bones make good soup (better than just meat)
    - feels good when the only things from the pig you toss are the nasty bits
    - you don't need to sweat scraping the meat off the bones

  11. If you can smoke meat you can smoke bones (with meat).
     
  12. This is not the first dish with bones. Missus made a beans and smoke bone soup already. Tasty, no pics.

    Now I am making kale and smoke bone soup.

    P.s. I actually found a picture of the bean soup.

    If we get cold again here, I'm smoking some pork bones! I have a bean cookoff in March...
     
  14. Meat picked off the bone , returned to the pot...
     
  15. Thickened with yoghurt and sour cream.
    It's way too late for soup...But I have to have a bowl.
