Smoked Pickled Sausage

4 cups white vinegar

1 cup water

2.5 T crushed red pepper flakes

1 T cayenne (or however much you like)

2 lbs smoked sausage cut in half

Bring 4 cups of the vinegar to a broil. Add red pepper flake and remove from heat, Let stand until cool and add the cup of water to the vinegar. Cut sausage in halves. Put in plastic container (wall mart gallon for $2.99) add some liquid to the sausage, add cayenne and remaining liquid. Makes sure to cover the sausages with the vinegar solution.

I made these all the time when i lived in NEPA

If you want you can use store bought smoked sausage, just read and make sure they were cured.
 
Thanks so any smoked cured sausages how long do you let them sit in it.
The vinegar gets into the mear pretty fast but like smoked cheese, the longer you can wait the better.

And yes you can use any kind of store bought in a pinch.

@Smokin B. We used to get Miller's at the big flea Market in Marshall's Creek, PA all the time. Right on Rt.219. That person no longer sells them there anymore.
