Smoked my First Meat-Loaf

I had ground up 10 pounds of chuck for various things and decided to smoke a 2 pound meatloaf...





This is a family meatloaf recipe..


2 eggs.................... ..............1/4 teaspon oregano,basil,tyme.tarragon
cup bread crumbs..................... teaspoon salt
1/2 medium grated onion............ couple grinds malabar pepper
1/4 small red,green pepper ........1/4 cup parsley
4 cloves my garlic.................... 1/3 pound mozzerela
2 tablespoons worchestshire....... 1/3 pound provolone
1/4 cup red wine
1/4 cup reduced tomato sauce


Mixed it up and let absorb in fridge few hours







Rolled out and added cheese








Came up with this to smoke it on








Ready for smoker.Used small chunk pecan,red oak,cherry









Had some fresh pulled beets and steamed/boiled













Reduced some of my canned tomatoes and added tomato paste and garlic then coated meatloaf for last 20 minutes


All done-someone said it smelled smokey like my ribs








Was much better then i expected.Smokey and moist...Will do again!

i was surprised too at how moist the meat was you would think it would be really dry. but no they are good.
 
Very nice Alex! I think I just stole the reciper though I am going to add some of that venison burger we just ground!

I had hated meatloaf for a long time due to, well childhood experiences with it and never ate it since. About a year ago I figured I would try smoking one and it turns out it was great!
Only tried it the one time but after looking at your post I see another meatloaf smoke in the near future.
 
It was all going good till you hit me with those beet it all came to a screaking halt for me I like the meatloaf ans the spice cmob sounds really nice and I'm sure mighty tastey too. Great job there alex.
