Smoked my first beef brisket

Well.......it didn't come out like I'd hoped.

This is what I did:

2.5 lb. beef brisket put a couple different rubs on it. Wrapped in plastic wrap and put in fridge for a couple hours. Took it out and let it sit to get to room temp for an hour. Smoked in Masterbuilt electric smoker until internal temp reached 160*. Took it out and double wrapped in foil. Put back in smoker until internal temp was 190*. Removed from smoker and let rest for 2 hrs. Put in fridge until next day. Took out of fridge and set on counter for 1/2 hour and then put it in theoven @250 for about an hour. Had small pan with water in oven as well. When it was done it looked great!! LOOKED! When I cut into the meat it was a little tough. This was a practice run for this weekend. I am having a party and wanted to smoke a 5 or 6 lb piece. Can anyone help?!
